Avocado Oil Brownies

Ingredients:

  • 1/2 cup Avocado Oil (I use Ahuacatlan)
  • 1 cup sugar
  • 1 teaspoon of vanilla extract
  • 2 eggs
  • 1 tablespoon coconut flour
  • Just under 1/2 cup sunflower flour (coconut flour and sunflower flour = 1/2 cup)
  • 1/3 cup of unsweetened cocoa powder
  • 1/4 teaspoon baking powder 
  • 1/4 teaspoon salt


Equipment:
  • 9X9 baking pan
  • Medium bowl
  • electric mixer 
Instructions:
  1. Preheat oven to 350 degrees F. Grease a 9X9 inch pan. (coconut or avocado oil)
  2. In a medium bowl, mix together the oil, sugar, and vanilla.  
  3. Beat in eggs. 
  4. In a separate bowl combine flour (place coconut flour in measuring cup and then add sunflower flour to equal 1/2 cup), cocoa, baking powder, and slat. Gradually stir into the eggs mixture until blended.
  5. Spread batter evenly into prepared pan
  6. Bake for 20 to 25 minutes, or until brownies begin to pull away form the edge of the pan. Also when poked with a toothpick it comes out clean.
  7. Let cool before cutting into squares
