Ingredients:
- 1/2 cup Avocado Oil (I use Ahuacatlan)
- 1 cup sugar
- 1 teaspoon of vanilla extract
- 2 eggs
- 1 tablespoon coconut flour
- Just under 1/2 cup sunflower flour (coconut flour and sunflower flour = 1/2 cup)
- 1/3 cup of unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
Equipment:
- 9X9 baking pan
- Medium bowl
- electric mixer
Instructions:
- Preheat oven to 350 degrees F. Grease a 9X9 inch pan. (coconut or avocado oil)
- In a medium bowl, mix together the oil, sugar, and vanilla.
- Beat in eggs.
- In a separate bowl combine flour (place coconut flour in measuring cup and then add sunflower flour to equal 1/2 cup), cocoa, baking powder, and slat. Gradually stir into the eggs mixture until blended.
- Spread batter evenly into prepared pan
- Bake for 20 to 25 minutes, or until brownies begin to pull away form the edge of the pan. Also when poked with a toothpick it comes out clean.
- Let cool before cutting into squares
